  • 1 stalk celery, diced
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 large potato, cut into 1/2-inch cubes
  • 2 carrots, peeled and sliced
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon crushed red pepper flakes
  • 1 cup frozen peas
  • 2 cupfuls of chicken stock (fat free, low sodium)
  • 1 (14.5 oz.) can fire roasted tomatoes
  • Kosher or sea salt to taste
  • 2 cupfuls (cooked) leftover turkey or chicken cubes


  1. The first step is to put together all the above ingredients, with the exception of turkey to the slow cooker, stir gently to blend.
  2. Cover and cook on low 8 hours or until carrots are tender, then add the leftover turkey to the other ingredients, in the slow cooker for the last 30 minutes of cooking time and cook until warmed through.
